Over and Out Potluck

I thought in celebration of Caleb ' s first camp, I would do something special and bake cupcakes from scratch. And not just any cupcakes, but cupcakes with marshmallow filling. Everything was going well (if you consider undercooked brownies which were collapsing or sticking every time I tried to cut out the top for the filling a success. All I can say is thank goodness for icing to hide any evidence of failure and speaking of evidence....) until the very last step....the icing.

10 or so years ago I bought an icing gun from Pampered Chef for all of my future baking adventures, which never happened. But finally!! I had a use for the gun which had never even been taken out of the box.   Unfortunately,  I could not find the gun amongst the piles and piles of boxes still unpacked from the move. So I leaned on the Internet for help and recalled seeing a tip about using a zip lock bag for icing by cutting a little hole in the corner. Someone should have mentioned that this is a terrible idea for chocolate icing because it ends up looking like a dog pooped on your cupcakes.

With a little help from chopped chocolate chips which I sprinkled on top to cover the dog poop, I had halfway decent presentable cupcakes to share at the Over & Out potluck. But every time we passed the tray of cupcakes, Emilie & I giggled when we noticed someone had actually taken a poop-cake!!
